ORGANIC PIZZERIA
A Sicilian pizza you will love at the first bite, tasty and digestible. Since 1999 we have used exclusively ancient Sicilian grain flours from organic farming that, thanks to their stone grinding, preserve the nutritional and organoleptic properties of wheat germ, making the pizza tasty and highly digestible. We collaborate with small local zero food miles producers for a product that is always fresh and genuine, thus respecting nature and our health.

The organic pizzeria TERRA MADRE follows simple fundamental principles: the territory and seasonality, the origin and history of the product itself and pursues the zero food miles philosophy. We collaborate with small, short-chain producers who practice organic and bio-dynamic cultivation, thus respecting nature and our health. You will learn we use organic Sicilian flours that are not sourced, our doughs are leavened for more than 48 hours, in favour of the authenticity of taste and flavour, vitamins and minerals, guaranteeing a HEALTHY, TASTY, DIGESTIBLE pizza.

A PIZZA FOR EVERYONE
If you are celiac, intolerant or allergic, you have chosen the right place: we make dough for everyone, from gluten-free to protein-based, to meet different dietary needs. We are mainly a takeaway pizzeria but we reserve some tables in the indoor or outdoor lounge for those who want to enjoy the freshly baked pizza.
OUR DOUGHS
CLASSIC ORGANIC
The classic dough represents our choice in wanting to use ancient stone-ground organic grains, which maintain the original and organoleptic properties that, unlike a white soft wheat flour, allows an optimal result in the phases of digestibility, taste and fragrance.
LOW FAT PROTEIN-BASED
Dough made of 70% OATMEAL and MILLET flour, ideal for those who want to maintain a correct protein intake and a low calorie content for physical needs related to the need to keep weight, glycemic, gluten and muscle mass under control, without sacrificing the flavour and taste of a pizza with a result that will surprise you.
PURE PERCIASACCHI GRAIN
One of the oldest Sicilian grains, called the grain of the poor, has risked being lost in time, it is not uncommon to hear about the Sicilian kamut. The perciasacchi dough is softer than the Timilia dough, has a low glycemic index, excellent for those who follow a diet low in gluten and fat.
PURE TIMILIA GRAIN
Lightly tumbled Sicilian wholemeal flour with a high protein value and a low gluten index, low in fat, is ideal for those following a diet. The pizza is thinner and crunchier than the classic dough.
5 CEREALS
Rich in mineral salts, omega 3, group B vitamins, this type of flour contains many highly digestible fibres, is dark and has an excellent nutritional intake.
GLUTEN-FREE
AIC certificate. Dough mix between corn and rice flours (PROCESSED IN A SEPARATE AND SPECIALIZED ENVIRONMENT FOR THIS TYPE OF PRODUCTION).
GLUTEN FREE, LACTOSE FREE
Rice flour-only dough.
UNLEAVENED
Yeast-free dough.
